Suntory Yamazaki Distillery, located in Shimamoto Town, Mishima District, Osaka Prefecture, is the very first malt whisky distillery in Japan. This facility symbolizes the history of whisky making in Japan and is owned and operated by Suntory. Uniquely for a single distillery, it possesses the advanced technology to produce an incredibly diverse range of original spirits, a diversity that has earned it global acclaim. In 2023, the facility underwent a renewal, introducing state-of-the-art equipment and a more sophisticated, refined tour program.
The history of the distillery begins with the passion of Shinjiro Torii, the founder of Suntory (formerly Kotobukiya). Driven by a desire to create authentic whisky suited to the Japanese palate, Torii introduced Scottish techniques to Japan. The site was chosen because its topography and climate closely resemble those of Scotland, and because Yamazaki is a land famous for its high-quality water. Completed in 1924, the distillery began production under the direction of Masataka Taketsuru, following traditional methods. The distillery continued operations even through the war years and significantly contributed to the development of Japanese whisky culture in the post-war era. It also holds a unique history of evolution, such as the development and use of Mizunara oak barrels during times when importing foreign wood was difficult.

At the current Yamazaki Distillery, you can observe the detailed stages of whisky production through the renovated tour facilities. A key feature is the operation of 16 different pot stills, varying in size, shape, and heating/cooling methods. This setup allows for the creation of over 100 different types of original spirits. During the tour, you can learn about these specialized pieces of equipment, the vital role of barrels in the aging process, and the intricate techniques of blending. Programs are tailored to your interests, ranging from the standard 'Monozukuri Tour' to the more exclusive 'Prestige Tour,' which grants access to restricted areas.
The distillery provides an environment where the whisky production process can be observed throughout the year. While there are no specific seasonal restrictions, the scenery—such as the steam rising from the stills or the rows of aging barrels—changes its expression depending on the time of day. It is highly recommended to check the specific tour content in advance, as the programs are designed to integrate specific production stages and tasting experiences.
There are two main types of tours offered. The first is the 'Monozukuri Tour,' where you receive explanations of the distillation process and can enjoy a tasting of Single Malt Yamazaki. The second is the 'Monozukuri Tour Prestige,' which offers a more exclusive experience, allowing visitors to see special areas that are usually off-limits to the public. Through these tours, visitors can gain a deep understanding of the complex differentiation of spirits and the art of blending Japanese whisky.
Located in Shimamoto Town, the distillery sits at the confluence of three rivers: the Katsura, Uji, and Kizu. This area has been known since ancient times for its exceptionally pure water.
