Suntory Hakushu Distillery, located in the Hokuto City area of Yamanashi Prefecture at the foot of the Southern Alps, is a premier facility operated by Suntory. Known as the 'Forest Distillery,' it is surrounded by breathtaking natural scenery where high-quality Japanese whisky is crafted. Beyond being a place to learn about the whisky-making process, the facility serves as a cultural hub with an attached shop and restaurant, allowing visitors to experience the essence of whisky culture through all five senses.
The distillery maintains a perfect harmony between traditional methods and modern technology. A key element of the Hakushu profile is the natural water from the Southern Alps. This water, which has filtered through granite layers over many years, provides a clear, crisp foundation for the whisky. Furthermore, the use of traditional wooden vats (mokuoke) during the fermentation process imparts a unique character and a refreshing, fruity aroma that cannot be achieved with standard stainless steel tanks. This seamless blend of natural environment and advanced craftsmanship supports the globally acclaimed 'Hakushu' brand.

Within the distillery grounds, you can observe the intricate journey of how whisky is born. You can learn about technical aspects, such as how the shape of the pot stills affects the aroma and the role of wooden vats in fermentation. The on-site shop offers a wide variety of products, including limited edition items, making it a perfect spot for souvenir hunting. Additionally, the restaurant provides a space to deepen your understanding of the whisky's character while enjoying the fresh, crisp air of the forest.
The distillery offers a beautiful experience throughout the year, but the period from May to August is particularly recommended. During these months, the lush greenery is at its peak, enhancing the sensation of the forest's freshness alongside the whisky's bright flavors. We recommend visiting during the daytime to enjoy the tour under natural light, and spending your afternoon relaxing at the shop or restaurant in the tranquil atmosphere.
The most popular activity is the 'Monozukuri (Craftsmanship) Tour,' which requires a reservation. This tour offers a deep dive into the technical details of whisky production. At the on-site restaurant, you can fully enjoy the flavors through experiences such as tasting highballs that highlight the characteristics of Hakushu or participating in a three-type tasting set. Please note that for safety and legal compliance, those driving vehicles are strictly prohibited from tasting.
The Hokuto/Hakushu area is famous for its stunning natural environment at the foot of the Southern Alps. The region is rich in beautiful spring water, campsites, and hiking trails, making it easy to combine a distillery visit with outdoor exploration. A shuttle bus service is also available from Kobuchizawa Station, allowing you to easily integrate the distillery into a broader sightseeing itinerary.
